What is Luna's Tacos & Tequila's Food Truck?

In early June of 2026, I noticed that Luna's Tacos & Tequila was teasing "something new coming soon for patio season.." That may have been referencing their soft-serve-margaritas, but I though it also may have been referencing a new pink food truck.

I had seen Action Signs talking up how they had just gotten done getting a trailer ready for Luna's to go on the road, which added to the intrigue the pink trailer:

I reached out to Luna's and got the lowdown on their "new food truck." Technically, it's a mobile corn roaster that they'd had that they use to prepare sweet corn on-site at events throughout Northern Colorado such as the Larimer County Fair, The Greeley Blues Jam, the Taste of Fort Collins and more.

What Kinds of Items Can Be Found on the Menu with the Mobile Corn Roaster ?

• Classic Roasted Sweet Corn with butter.
• Traditional Mexican Elote topped with mayonnaise, cotija cheese, and fresh lime.
